Run down (salt catfish & tomatoes)

Ingredients:
1 lbsMackerel fillets, or shad
1/4 cupLime juice
3 cupMilk, coconut
1 largeOnions, chopped fine
2 Garlic cloves
1 tbspPepper, hot, red, chopped
-fine
1 lbsTomatoes, peeled, chopped
Salt
Pepper, ground
1/4 tspThyme
1 tbspVinegar, malt
Procedures:
1Pour the lime juice over the fish and set aside.
2Cook the coconut milk in a frying pan until it is oily.
3Add onion and garlic and cook until onion is tender.
4Add the hot pepper, tomatoes, salt, papper, thyme and vinegar.
5Stir and cook very gently for 10 minutes.
6Drain fish, add, and cook until the fish is tender, about 10 minutes.
7Serve hot with boiled bananas.
8Run down can also be used as a stuffing for breadfruit.
9Salt codfish or rock lobster tails can be used instead of shad or mackerel
