Rainbow trout with roasted garlic mayonnaise

Ingredients:
4 Rainbow Trout Fillets
-- (about 4 oz. each)
MARINADE
1/4 cupFresh Lime Juice
1 tbspVegetable Oil
1/4 tspCumin
MAYONNAISE
1 Bulb Garlic
2 tbspRegular or Light Mayonnaise
1/2 tspFresh Lemon Juice
1/8 tspCumin
Procedures:
1Marinate trout.
2Meanwhile,break garlic bulb into cloves, leaving skins intact.
3Place on cookie sheet in 350°F.
4Degree oven for about 15 minutes, until tender.
5Remove skins and mash garlic with fork: blend with mayonnaise ingredients.
6Refrigerate.
7Cook trout.
8Serve immediately with mayonnaise.
9Makes 2 to 4 servings
