Carob pineapple thisbies

Ingredients:
3/4 cupBlack mission figs, soaked
2 Hrs in ?c water
1/2 cupDates, pitted, soaked 2 hrs

1/4 cupWater
5 medDried pineapple rings, soak
1/2 Hr
1 1/2 tbspCarob powder
1 cupCoarsely ground walnuts
1/2 cupWalnut pieces
1/2 cupRaisins
1/2 cupGrated coconut
1/2 tspCinnamon
In ?c water
Procedures:
1Drain soaked fruit, reserving the soaking water.
2Puree the figs & dates with the carob powder in a food processor or blender at medium speed, adding a little soaking water if necessary.
3cut pineapple into small pieces, using scissors with wet blades to prevent from sticking.
4In a large bowl, mix the pureed figs & dates with the pineapple, ground walnuts, walnut pieces & raisins.
5in a small bowl, mix coconut & cinnamon.
6Form douhg into small balls; roll in coconut mixture & flatten into cookie shapes.
7Refrigerate until ready to saerve.
8Will keep refrigerated up to a month.
