| 1 | Boil the potatoes in their jackets until just fork tender. |
| 2 | Peel them & mash them until they are very smooth. |
| 3 | Add the remaining ingredients except the ghee. |
| 4 | Knead until well blended. |
| 5 | Divide into 8 portions. |
| 6 | Wash & dry your hands & then rub them a little vegetable oil. |
| 7 | Roll each ball in your hands & then flatten into a small round patty about ?inch thick. |
| 8 | Brush a griddle or skilet with ghee. |
| 9 | Place over the lowest heat possible &, when the pan is hot, add the patties in a single layer. |
| 10 | Pan fry for 15 to 20 minutes per side until a redish brown crust is formed. |
| 11 | Serve hot. |
