Sauteed fiddleheads with fresh herbs

Ingredients:
2 tbspOlive oil
3/4 cupOnions, chopped
2 tspGarlic, minced
1/2 cupCarrots, julienned
1/2 tspSalt
1 tbspCilantro, chopped
1 tbspBasil, chopped
2 cupFiddleheads, trimmed
Procedures:
1Heat the oil in a pot.
2Saute the onions, garlic, carrots, salt & fresh herbs for about 3 minutes.
3Add the fiddleheads & saute for a further 5 minutes.
4Stir occasionally in order to ensure even cooking.
5The fiddleheads should be a rich green colour & semi soft.
6Serve hot.
