| cup | Sliced cooked sweet potatoes | | | -or yams | | 2
| | Plantains, peeled & chopped | | 1/2
| cup | Chopped green onion | | 1/2
| cup | Chopped cooked ham (opt) | | 1
| | Garlic clove, minced | | 1/2
| cup | Chicken or beef broth | | 2
| tbsp | Butter or margarine | | 2
| tbsp | Chopped fresh thyme, dill | | | -chervil, or savory | | | Salt to taste | | | Pepper to taste |

Procedures:
| 1 | In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. | | 2 | Add potatoes, plantains, onion, ham, if desired, and garlic. | | 3 | Cook stirring frequently, about 5 minutes. | | 4 | Add broth. | | 5 | Cover and simmer 10 minutes or until plantains are tender. | | 6 | Add remaining butter and desired fresh herbs. | | 7 | Season, to taste, with salt and pepper. |
