Sauteed plantains & sweet potatoes

Ingredients:
2 tbspButter or margarine
2 tbspCooking oil
2 cupSliced cooked sweet potatoes
-or yams
2 Plantains, peeled & chopped
1/2 cupChopped green onion
1/2 cupChopped cooked ham (opt)
1 Garlic clove, minced
1/2 cupChicken or beef broth
2 tbspButter or margarine
2 tbspChopped fresh thyme, dill
-chervil, or savory
Salt to taste
Pepper to taste
Procedures:
1In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot.
2Add potatoes, plantains, onion, ham, if desired, and garlic.
3Cook stirring frequently, about 5 minutes.
4Add broth.
5Cover and simmer 10 minutes or until plantains are tender.
6Add remaining butter and desired fresh herbs.
7Season, to taste, with salt and pepper.
