Procedures:
| 1 | 3 tbsp butter 2 tbsp flour 1 ?tsp salt ?tsp pepper 3 c milk 6 mdm potatoes, pared and thinly sliced (6 c) 2 tbsp chopped onion | | 2 | preheat oven to 350 degrees. | | 3 | Butter a 2 qt casserole. | | 4 | Make a basic white sauce of butter, flour, salt, pepper & milk. | | 5 | Place half the potatoes in casserole. | | 6 | Cover with half the onion and half the sauce. | | 7 | Repeat layers. | | 8 | Cover and bake about an hour. | | 9 | (i like to cook it a bit longer, about 1 hour and 15 minutes before uncovering it). | | 10 | Test to make sure potatoes are almost, but not quite, fork tender. | | 11 | Uncover and bake 30 minutes longer. | | 12 | left over cooked ham layered in the middle makes it almost a one dish meal, and is a good addition...tho i usually serve this with ham to begin with. | | 13 | serves 4-6 (the recipe says...i say 4 max!) | | 14 | better homes & gardens, 1968 edition | | 15 | this recipe comes from my old better homes cookbook, and was a |
