Ingredients:
| 3
| large | Sweet potatoes or yams | | 1
| large | Onion, thinly sliced | | 3
| | Tart-sweet apples, washed | | 4
| tbsp | Butter (divided use) | | 2
| tbsp | Brown sugar | | 2
| tbsp | Flour | | 1
| cup | Beer | | | Salt & pepper to taste |

Procedures:
| 1 | Preheat oven to 350. | | 2 | thinly slice potatoes and layer them in a agreased 3 quart casserole. | | 3 | Slice onions and place over potatoes. | | 4 | Core apples and slice. | | 5 | Cover onion layer. | | 6 | Melt 2 t of the butter and drizzle over casserole; sprinkle with brown sugar. | | 7 | Melt remaining butter in a sauce pan and stir in flour, salt and pepper; cook over low heat for 1 to 2 minutes. | | 8 | Slowly add beer and cook until thickened. | | 9 | Pour over layered potatoes, onions and apples. | | 10 | Cover with foil and bake at 350°F for 30 to 45 minutes. | | 11 | Uncover and cook 15 - 20 minutes more. |
