Scalloped sweet potatoes

Ingredients:
3 largeSweet potatoes or yams
1 largeOnion, thinly sliced
3 Tart-sweet apples, washed
4 tbspButter (divided use)
2 tbspBrown sugar
2 tbspFlour
1 cupBeer
Salt & pepper to taste
Procedures:
1Preheat oven to 350.
2thinly slice potatoes and layer them in a agreased 3 quart casserole.
3Slice onions and place over potatoes.
4Core apples and slice.
5Cover onion layer.
6Melt 2 t of the butter and drizzle over casserole; sprinkle with brown sugar.
7Melt remaining butter in a sauce pan and stir in flour, salt and pepper; cook over low heat for 1 to 2 minutes.
8Slowly add beer and cook until thickened.
9Pour over layered potatoes, onions and apples.
10Cover with foil and bake at 350°F for 30 to 45 minutes.
11Uncover and cook 15 - 20 minutes more.
