Sesame spinach

Ingredients:
2 tbspOil
2 Garlic cloves
Finely chopped
2 tspGinger, freshly grated
6 Scallions, finely chopped
1 bn Fresh spinach (very large)
Washed and drained
DRESSING
1 1/2 tbspSoy sauce
1 tspSesame oil
1/2 tspSugar
Procedures:
1Heat oil in wok or large skillet.
2Add garlic, ginger and scallions; saute over medium heat until softened, 2 to 3 minutes.
3Add spinach and stir-fry until cooked through but still crispy to the taste, 2 to 3 minutes.
4Add soy sauce/sesame oil/sugar mixture and heat through.
5Serve immediately.
