Ingredients:
INGREDIENTS
10 xRed Potatoes
2 cupSnow Peas &/or green veg.
1/2 cupShoestring Carrots
1 medOnion
Garlic Clove
1 cupBroth (Veg. or Defatted Ch.)
1 cupSkim Milk or Lo Fat Soy Milk
2 tbspCornstarch or Arrowroot
1/2 tspBasil
1/2 tspTarragon
1/4 tspPepper
1/4 tspSalt
1/2 cupParmesan Cheese
Procedures:
1Slice red potatoes with skins on and place in steamer with snow peas or green vegetables of choice.
2Steam for about 15 minutes.
3While potatoes & vegetables are steaming, saut?onions, carrots & garlic in large non stick fry pan (spray with pam or grease with a little olive oil).
4While 1 & 2 are working, combine the milk, broth, spices & cornstarch in a 2 quart measure.
5When vegetables are almost done to the point of desired softness, combine with sautéd vegetables.
6Pour sauce over all and combine.
7Cook further until vegetables are done and sauce thickens.
8Mix in parmesan cheese before serving.
