Ingredients:
4 medPotatoes, evenly sized
1 tspSalt
3 tbspButter, melted
3 tbspChopped fresh herbs such as
-parsley, chives, thyme, sage
-OR- herbs of your choice.
4 tbspGrated cheddar cheese
1 1/2 tbspParmesan cheese
Procedures:
1To oven bake: 1) peel potatoes if the skin is tough; otherwise scrub and rinse.
22) cut the potatoes into thin slices but not all the way through.
3Use the handle of a wooden spoon to prevent the knife from cutting all the way.
43) put the potatoes into a baking dish and slightly "fan-out" the slices.
54) sprinkle with salt and herbs then drizzle with butter.
65) bake potatoes at 425f for about 50 minutes.
76) remove from the oven and sprinkle with cheeses.
87) bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside.
