Ingredients:
1 lbsRigatoni
6 medTomatoes, sliced very thin
2 Sweet red or yellow peppers
1/2 cupFresh basil, chopped -or-
1 tbspDried basil
3 Cl Garlic, finely chopped
1/4 cupOlive oil, or as needed
Salt and pepper
1 Parmesan or romano cheese, f
Procedures:
1Combine the tomatoes, peppers, bail, garlic, oil, salt, pepper and set aside.
2Boil the pasta, then drain well.
3Toss with cheese to taste and add the tomato mixture.
4Add salt, pepper, and cheese to taste.
