Ingredients:

| large | Russet potatoes, peeled -- | | | Aprox 2 pounds OR | | 8
| small | Russet potatoes, peeled | | 2
| tbsp | Unsalted butter | | 2
| tbsp | Olive oil | | | Salt and pepper -- to taste |

Procedures:
| 1 | Grate the potatoes onto a large clean kitchen towel that can be stained. | | 2 | Roll the potatoes up in the towel and wring to remove moisture. | | 3 | (it is best to do this over the sink, since it will produce a suprising amount of liquid). | | 4 | Melt the butter with the olive oil on a large griddle. | | 5 | Form the grated potatoes into 4 pancakes. | | 6 | Cook the pancakes over medium heat for about 10 minutes, until bottom is golden brown, then flip the pancakes. | | 7 | Cook on the other side for about 5 minutes. | | 8 | Season with salt and pepper and serve plain or with sour cream and applesauce. | | 9 | ~ - - - - - - - - - - - - - - - - - | | 10 | Sojourn systems ltd. | | 11 | recipe by : diane mott davidson, the last suppers mystery |
