Apple brazil nut squares

Ingredients:
PASTRY
2 cupFlour
3 tbspSugar
3/4 cupButter or margarine, cut up
1 Egg, slightly beaten
1 tbspFresh lemon juice
4 tbspWater, iced
FILLING
6 Egg yolks
3/4 cupSugar
1/8 tspSalt
3/4 cupBrazil nuts -OR- almonds
- pulverized
1/3 cupDark -OR- light raisins
3 cupTart appples, shredded
- about 3 large
1/2 tspCinnamon
6 tbspApricot jam
6 tbspButter or margarine, melted
SERVE WITH
Slightly sweetened whipped
- cream
Toasted slivered almonds
Procedures:
1Mix flour and sugar in bowl.
2Cut butter into mixture until pieces are the size of peas.
3Blend the egg, lemon juice and 3 tbls water.
4Sprinkle over the dry ingredients.
5Toss with fork until four is moistened.
6Press into a ball.
7Add last tbls of water if needed.
8Roll pastry into a 9x13" baking pan, building the edge up about 1".
9In small bowl, beat egg yolks until fluffy.
10Add sugar and salt.
11Beat at high speed until thick and lemon colored.
12Blend in the nuts and raisins.
13Fold in the appples and cinnamon.
14Spread apricot jam over the pastry.
15Top with apple-nut mixture.
16Bake at 350°F for 25 minutes.
17Drizzle with melted butter.
18Return to oven.
19Bake 15-20 minutes longer until top is golden.
20Cut into squares.
21Serve warm with slightly sweetened whipped cream and garnished with almonds
