Ingredients:
4 eachMedium tomatoes
16 eachLarge mushrooms, coarsely
Chopped
2 tbspButter or margarine
Salt/pepper to taste
1/2 tspDried tarragon
3 tbspFresh parsley, minced
Procedures:
1Hollow out tomatoes, reserving centers for another use.
2Drain tomato shells.
3Saute chopped mushrooms in butter or margarine and add seasonings.
4Fill tomatoes with mushroom mixture, and bake at 350 °F for 30 minutes or until heated.
