Ingredients:
8 largeTomatoes
1/4 cupCider vinegar
2 tbspBalsamic vinegar
2 tbspSugar
3 tbspTofu mayonnaise
1/2 tspCelery seeds
1/2 tspDry mustard
1/4 tspWhite pepper
4 cupGreen cabbage, shredded
1 eachTart green apple, minced
1 cupCorn kernels
1 largeGreen bell pepper, minced
1/4 cupRed onion, minced
Salt, to taste
Procedures:
1Slice tops of tomatoes & scoop out their insides.
2Reserve for another use.
3Set tomatoes on a platter.
4In a large bowl, toss together the remaining ingredients.
5Spoon into the tomatoes, serve or wrap & store in the refrigerator overnight to allow the flavours to develop.
6Any leftover slaw will keep refrigerated in a covered container, for 2 days.
