Ingredients:
3 Eggs
3 cupShredded peeled potatoes
1 1/2 cupCooked turkey, finely choppe
1/4 cupGreen onions with tops, slic
2 tbspAll-purpose flour
1 1/2 tspSalt
Cooking oil
Cranberry sauce, optional
Procedures:
1Recipe by: taste of home dec/jan 1996 in a bowl, beat the eggs.
2Add potatoes, turkey, onions, flour and salt; mix well.
3Heat about ? of oil in a large skillet.
4Pour batter by 1/3 cupfuls into hot oil.
5Fry 5-6 minutes on each side or until potatoes are tender and pancakes are golden brown.
6Serve with cranberry sauce if desired.
