Ingredients:
2 tbspVegetable oil
1 Onion, diced
2 Cloves garlic, chopped
2 Large baking potatoes, -
Peeled & diced
1 Large sweet potatoe, -
Peeled and diced
1/2 cupWater
1 Zucchini, diced
1 Red pepper, diced
1 tspSalt
1/2 tspPepper
1/4 cupChopped fresh chives
Procedures:
1Heat oil in large non-stick skillet.
2Add onions and garlic; cook a few minutes until onions are softened.
3Add potatoes and sweet potato; cook until lightly browned, about 10 minutes.
4Add water; cook until about half the water evaporates, about 5 minutes.
5Add zucchini, red pepper, yellow pepper, salt and the pepper.
6Cook until vegetables wilt.
7Mash vegetables lightly and sprinkle with chives.
8Makes 6 to 8 servings.
