Ingredients:

| tbsp | Vegetable oil | | 1
| | Onion, diced | | 2
| | Cloves garlic, chopped | | 2
| | Large baking potatoes, - | | | Peeled & diced | | 1
| | Large sweet potatoe, - | | | Peeled and diced | | 1/2
| cup | Water | | 1
| | Zucchini, diced | | 1
| | Red pepper, diced | | 1
| tsp | Salt | | 1/2
| tsp | Pepper | | 1/4
| cup | Chopped fresh chives |

Procedures:
| 1 | Heat oil in large non-stick skillet. | | 2 | Add onions and garlic; cook a few minutes until onions are softened. | | 3 | Add potatoes and sweet potato; cook until lightly browned, about 10 minutes. | | 4 | Add water; cook until about half the water evaporates, about 5 minutes. | | 5 | Add zucchini, red pepper, yellow pepper, salt and the pepper. | | 6 | Cook until vegetables wilt. | | 7 | Mash vegetables lightly and sprinkle with chives. | | 8 | Makes 6 to 8 servings. |
