Western frittata

Ingredients:
1 lbsGround turkey
2 tbspMinced garlic
2 tbspOil
1 1/4 tbspSalt
1 tbspCumin
3/4 tbspDried sage leaves
3/4 tbspDried thyme leaves
1/2 tbspPepper
1 packAmerican Mixtures Western-
-style frozen potatoes
-green beans, onions and
-red peppers, thawed (16 oz)
8 Eggs, slightly beaten
1 canSliced mushrooms, well
-drained (4 ?oz)
4 ozShredded, reduced-fat
-Cheddar or mozzarella
-cheese
Procedures:
1In 12" nonstick skillet over medium-high heat, brown turkey and garlic in oil, 10-12 minutes, stirring frequently; drain.
2Add salt, cumin, sage, thyme, pepper and vegetables; mix well.
3Reduce heat to low; pour eggs over vegetable mixture in skillet.
4Cover; cook 15-20 minutes.
5While cooking, as edges set, run spatula around edge of skilelt and lift vegetable mixture to allow uncooked eggs to flow to bottom of skillet.
6Cook until eggs are set.
7Sprinkle with mushrooms and cheese.
8Cover; cook 3 minutes or until cheese begins to melt.
9Loosen edges of frittata; slide onto large serving plate.
10Cut into wedges.
