Whipped sweet potatoes with nutmeg and lemon

Ingredients:
5 lbsDeep Orange Sweet Potatoes
-(Yams), peeled and cut
-into 2" pieces
1/2 cupButter, at room temperature
3 tbspUnsulfured Molasses
2 tspLemon Peel, grated
1 1/2 tspGround Nutmeg
Salt
Pepper
Fresh Parsley, minced
Lemon Peel, grated
Ground Nutmeg
Procedures:
1Cook sweet potatoes in a large pot of boiling salted water until tender, about 15 minutes.
2Drain well.
3Transfer to a large bowl and puree in mixer or food processor in batches.
4Return to pot.
5Mix in butter, molasses, 2 ts lemon peel and 1 ?ts nutmeg.
6Season with salt and pepper.
7Stir potato mixture over medium heat to rewarm and thicken slightly.
8Transfer potatoes to a serving bowl.
9Top with parsley, lemon and nutmeg.
