Ingredients:
3 cupSummer squash
1/4 cupEvaporated milk
2 tspButter(I used Margarine)
Salt & pepper to taste
Procedures:
1Peel and cut squash into small pieces.
2Place in sauce pan with small amount of water.
3Bring to a boil; reduce heat and simmer until squash is crisp-tender.
4Drain.
5Beat squash with rotary beater; add evaporated milk and butter.
6Beat until light and fluffy.
7Add salt and pepper.
8Food exchanges per serving: 1 vegetable exchange + 1 fat exchange cal: 68
