Pickled blackeyed peas

Ingredients:
4 cupCooked blackeyed peas
-- drained
DRESSING
1/2 cupCanola oil
1/2 cupPeanut oil
1/2 cupRed wine vinegar
1 Clove garlic
1/4 cupRed onions, thinly sliced
1/2 tspSalt
1 dashCayenne pepper
Procedures:
1While peas (either freshly cooked or canned) are draining, mix dressing.
2Toss with peas and cover tightly.
3Refrigerate overnight.
4Remove garlic.
5Refrigerate for several days to enrich flavor before serving.
6Serve with a slotted spoon, to mound on crackers or toast points as an appetizer
