Ingredients:
1 largeCelery root, trimmed, peeled
2 medBaking potatoes, cubed
2 medTurnips, cubed
4 medLeeks, washed & sliced
1 tbspSalt
Pepper, to taste
Procedures:
1Combine the celery root, potaotes, turnips, and leeks in a large saucepan and cover with cold water.
2Place over medium-high heat and bring to a boil.
3Reduce heat and simmer until all of the vegetables are tender, about 30 mins.
4Drain well and pass the vegetables through a ricer.
5Add salt and pepper to taste.
6Divide among 4 plates and serve immediately.
