Ingredients:
1/4 cupChopped green chilies
1/4 cupChopped parsley (fresh)
1/4 cupChopped onion
2 cupCoarsely chopped cooked
-potatoes
2 Cloves garlic, finely
-chopped
1 can(15 oz) pinto beans
-rinsed & drained
1 tbspVegetable oil
3/4 cupSalsa
Procedures:
1Mix all ingredients except oil and salsa.
2Heat oil in large nonstick skillet over medium-high heat until hot.
3Add potato mixture.
4Cook about 8 minutes, stirring frequently, until potatoes are light brown.
5Serve with salsa.
