Zucchini with fresh herbs

Ingredients:
1/4 cupVegetable stock
1/3 cupRed onion, minced
3 eachGarlic cloves, minced
2 cupTomatoes, diced
2 cupZucchini, sliced
1/2 cupRed or yellow bell pepper
-- minced
1/2 tspOregano, minced
1 tbspBasil, minced
Procedures:
1In a large skillet, over medium heat, heat the stock until it simmers.
2Add onion & saute for 3 minutes.
3Stir frequently.
4Add garlic, tomatoes, zucchini & pepper.
5Cover & cook until the zucchini is soft, 5 minutes.
6Add herbs: cook uncvoered for 3 minutes.
7Serve warm or cold with a good home-made bread for a lunch.
