Ingredients:
4 largeBaking potatoes
2/3 cupMilk
1/2 cupChopped green onions
1/4 cupButter
1/2 tspSalt
1/4 tspPepper
Procedures:
1This irish dish is best made with coarse skinned baking potatoes,because they breack down easily to produce fluffier mashed potatoes.
2peel potatoes.
3Cut each into 3 chunks.
4In 12 cup casserole, sprinkle potatoes with 2 tbsp water, cover, and microwave on high for 15-18 minutes or until tender, rearranging occasionally.
5Mash well.
6Stir in milk, onions and butter.
7Microwave, uncovered on high for 1 minutes or until heated through.
8Add salt and pepper, beat until smooth.
