Pineapple glazed yams

Ingredients:
4 largeYams
1/2 cupBrown sugar or natural
--sweetener
1 tspOrange rind, grated
2 tspCornstarch
4 tbspMargarine, non-dairy
1 tspSalt
1 cupPineapple, crushed
Procedures:
1Peel the yams, slice them thickly, and boil them in salted water for about 10 minutes.
2Melt the margarine in a large, heavy skillet and stir in the brown sugar, salt, orange rind and pineapple.
3dissolve the cornstarch in about 2 tbs of cold water and stir it into the pineapple mixture.
4When the mixture is well blended and thickened, add the yams and turn them over until all the slices are coated evenly.
5Continue cooking over a medium flame until the yams are quite tender and well-glazed.
6Serve hot.
7Serves 6.
