Hard rock cafe baked potato soup

Ingredients:
6 Bacon slices (or 8) fried
Crumbled
1 cupYellow onions, diced
2/3 cupFlour
6 cupChicken stock, hot
4 cupPotatoes, baked, diced
Peeled
2 cupHeavy cream
1/4 cupParsley, chopped
1 1/2 tspGranulated garlic
1 1/2 tspSalt
1 1/2 tspRed pepper sauce
1 1/2 tspCoarse black pepper
1 cupCheddar cheese, grated
1/4 cupGreen onions, diced, white
Only
Procedures:
1Chop bacon; reserve.
2Cook onions in remaining drippings over medium high heat until transparent, about 3 minutes.
3Add flour, stirring to prevent lumps; cook for 3-5 minutes, until mixture just begins to turn golden.
4Add chicken stock grdually, whisking to prevent lumps until liquid thickens.
5Reduce heat to simmer and add potatoes, cream, chopped bacon, parsley, garlic, basil, salt, pepper sauce and plack pepper.
6Simmer for 10 minutes; do not allow to boil.
7Add grated cheese and green onions, heat until cheese melts smoothly.
8Garnish each serving as desired with chopped bacon, grated cheese and chopped parsley.
9makes 2 quarts.
