Hot garlic mayonnaise with potatoes-patatas c

Ingredients:
4 cupWater
1/4 tspSalt or less
4 medPotatoes, peeled
-washed and cut into chunks
3 tbspChopped parsley for garnish
MAYONNAISE
4 clGarlic, peeled
1 Egg yolk
2 tbspChopped onion
3 tbspChopped fresh cilantro
1/8 tspGround cayenne pepper
1 tspLemon juice
1 tspVinegar
1/2 tspSalt or less
1 cupOlive oil
Procedures:
1In a large saucepan, bring the water and salt to a boil.
2Place the potatoes in the " water and boil for about 20 minutes or until soft.
3Remove the potatoes and rinse with cold water and drain.
4Remove to a large bowl and set aside.
5In a food processor or blender, mix all the ingredients for the mayonnaise except the oil and blend well until smooth.(when making any sauce or mayonnaise, if it begins to break down during mixing, don"t despair.
6Simply add 1 - 2 tablespoons of hot water and continue mixing slowly).
7With the motor running, add the oil in a thin stream until the mixture is creamy.
8Pour the mixture over the potatoes and mix well.
9Serve at room temperature and garnish with chopped parsley.
