Ingredients:

| cup | Vegetable oil | | 4
| large | Cloves garlic, mninced | | 3
| tbsp | Fresh lemon juice | | 2
| tsp | Tabasco | | 1
| tsp | Fresh thyme, chopped or | | 1/4
| tsp | Dried | | 2
| large | Russet potatoes, cut 8 | | | -wedges each |

Procedures:
| 1 | Preheat oven to 400°F. | | 2 | Whisk oil, cloves, lime juice, tabasco and thyme in small bowl to blend. | | 3 | Season with salt. | | 4 | Arrange potatoes in 13x9x2" baking dish. | | 5 | Set aside ?c dressing; pour remaining over potatoes and toss to coat. | | 6 | Let stand 30 minutes. | | 7 | Roast potatoes until crisp and brown, turning occasionally, about 1 hour. | | 8 | Drizzle reserved dressing over potatoes. |
