Hot, hot potato wedges

Ingredients:
1/2 cupVegetable oil
4 largeCloves garlic, mninced
3 tbspFresh lemon juice
2 tspTabasco
1 tspFresh thyme, chopped or
1/4 tspDried
2 largeRusset potatoes, cut 8
-wedges each
Procedures:
1Preheat oven to 400°F.
2Whisk oil, cloves, lime juice, tabasco and thyme in small bowl to blend.
3Season with salt.
4Arrange potatoes in 13x9x2" baking dish.
5Set aside ?c dressing; pour remaining over potatoes and toss to coat.
6Let stand 30 minutes.
7Roast potatoes until crisp and brown, turning occasionally, about 1 hour.
8Drizzle reserved dressing over potatoes.
