Ingredients:
Vegetable oil cooking spray
4 tbspDijon mustard
2 tspPaprika
1 tspGround Cumin
1 tspChili Powder
1/8 tspCayenne Pepper
16 Red potatoes
Procedures:
1Preheat the oven to 400 degrees.
2spray a roasting pan 3 times to coat with the vegetable oil.
3put the mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl.
4Whisk to blend.
5Prick the potatoes several times with the tines of a fork and add them to the bowl.
6Toss to coat the potatoes evenly.
7Pour the coated potatoes in the prepared roasting pan, leaving a little space between them.
8bake for 45 minutes to 1 hour, until the potatoes are fork tender.
