Roasted yams with green tomatoes

Ingredients:
2 lbsYams
2 lbsGreen tomatoes, 7-8 medium
3 medRed tomatoes
3 medRed onions
6 largeCloves garlic
1 tbspOlive oil, to 2 tb
Salt & pepper to taste
Procedures:
1Peel the yams and cut them in ? or 1-inch dice.
2Trim the tomatoes and cut them in large chunks.
3Peel the onions and cut them in 1-inch chunks.
4Peel the garlic and, if the cloves are very large, cut them in half lengthwise.
5combine all the vegetables in a large bowl, drizzle on the olive oil, add some salt and pepper, and mix well.
6Spread the vegetables out on two baking sheets, preferably non-stick.
7roast the vegetables at 375°F for about 1 ?hours, moving them around and turning them twice during the cooking time.
8They should be very tender, and browning here and there.
9serve with couscous, or with a rice pilaf.
