Ginger-peachy butter

Ingredients:
1/2 cupButter, room temperature
1/4 cupSugar
1/2 tspMinced gingerroot or
-crystallized ginger
Pinch of salt
1/2 medPeach, peeled, minced
Procedures:
1In a small bowl, beat butter and sugar until creamy.
2Fold in gingerroot (or crystillized ginger), salt and peaches until evenly distributed.
3Spoon into a small serving dish.
4Cover and refrigerate.
5Let stand at room temperature 20 to 30 minutes before serving.
6Makes about 1 cup.
7Variation: substitute ?cup minced fresh nectarines or apricots for the peaches.
