Ingredients:

| cup | Butter, room temperature | | 1/4
| cup | Sugar | | 1/2
| tsp | Minced gingerroot or | | | -crystallized ginger | | | Pinch of salt | | 1/2
| med | Peach, peeled, minced |

Procedures:
| 1 | In a small bowl, beat butter and sugar until creamy. | | 2 | Fold in gingerroot (or crystillized ginger), salt and peaches until evenly distributed. | | 3 | Spoon into a small serving dish. | | 4 | Cover and refrigerate. | | 5 | Let stand at room temperature 20 to 30 minutes before serving. | | 6 | Makes about 1 cup. | | 7 | Variation: substitute ?cup minced fresh nectarines or apricots for the peaches. |
