Ingredients:
Boiling water
1 1/2 lbsFrench chestnuts
1/3 cupButter
Salt and pepper
1 cupDry bread crumbs
1/2 cupMilk, scalded
Procedures:
1Pour boiling water over chestnuts and let stand 5 minutes; remove skin with fingers and a knife.
2Cook nuts about ?hour in boiling salted water.
3Drain, mash and add butter and seasonings.
4Pour milk over crumbs and add to nut mixture.
5Mix well, stuff bird.
