Ingredients:
1 quartChestnuts
1/4 cupShortening **
1 Egg, well beaten
2 tspPoultry seasoning
1 pintBread crumbs
1 tspSalt
1/4 cupCelery, chopped
Procedures:
1** butter, chicken fat, or lard.
2Make a gash in each chestnut, place in an iron skillet with 1 tbsp of butter and shake over hot flame for a few minutes.
3Place in the oven for 10 minutes.
4Then remove the shell and skins.
5Cover the blanched chestnuts with boiling salt water and cook until tender.
6Strain and put through a ricer.
7Add the rest of the ingredients and mix well.
