Ingredients:

| med | Onion -- finely chopped | | 1
| | Rib celery -- finely | | | Chopped | | 2 1/2
| lbs | Lean ground turkey | | 1
| large | Egg white -- lightly beaten | | 1
| cup | Herb stuffing mix -- | | | Crushed | | 1
| tbsp | Prepared horseradish -- | | | Undrained | | 10
| oz | Box frozen chopped spinach | | | Defrosted and squeezed | | | Almost dry | | 1/2
| tsp | Salt | | 1/2
| tsp | Fresh ground black pepper | | 1/4
| cup | Plus 2 tablespoons ketchup |

Procedures:
| 1 | Preheat the oven to 350 degrees. | | 2 | Spray a 9x5x2 ?inch loaf pan with no-stick cooking spray. | | 3 | In a large mixing bowl, thoroughly mix all the ingredients, except for 2 tablespoons ketchup. | | 4 | Bake in the center of the oven for 50 to 60 minutes or until the temperature of the loaf reaches 160 degrees. | | 5 | Let cool in the pan for 10 minutes, then transfer to a serving platter. | | 6 | Let cool another 5 minutes before slicing. | | 7 | recipe by : gardner"s market- miami (4-18-96) |
