Orzo & spinach stuffing

Ingredients:
1/2 cupGreen onion, chopped
2 Cloves garlic, minced
1 tbspOlive oil
10 ozFrozen chopped spinach, thaw
- drained
1/4 tspSugar
1 canChicken broth
1 cupWater
1 1/4 cupOrzo, uncooked
3/4 tspGrated lemon rind
1/2 tspMarjoram
2 tspLemon juice
1/2 cupRaisins
1/4 cupPine nuts or almonds
Procedures:
1Saute onion and garlic in oil in large skillet for 2 mintues.
2Add spinach and sugar; heat through, about 4 minutes.
3Boil broth and water in a large saucepan.
4Add orzo, lemon rind and marjoram.
5Simmer, uncovered, until tender, about 10 minutes.
6Stir in lemon juice, raisins, nuts and spinach mixture.
7Stuff bird according to directions on turkey.
8Can also be made in a lightly greased 9x13" pan.
9Bake covered, in preheated 375°F oven for 40 minutes.
10Uncover for last 10 minutes of baking for a crisper stuffing.
