Ingredients:
3/4 cupPine nuts
1 tbspButter
1 medOnion, chopped (?c)
1 Bartlett pear, peel/core/chop
3/4 cupParsley, minced
1/4 cupCilantro, minced
1/3 cupDry bread crumbs
1/2 tspSalt
1/8 tspFresh ground black pepper
Procedures:
1Makes enough stuffing for 2 cornish hens
2toast nuts in a single layer in a dry skillet.
3Cook over medium heat, stirring and tossing just until nuts start to smell toasty.
4Melt butter in medium-size skillet.
5And the onion and cook, stirring frequently, until tender-crisp.
6Stir in the toasted nuts, pear, parsley, cilantro, bread crumbs, salt and pepper.
7Use to stuff cornish hens or a small chicken.
8Or bake stuffing in a greased, covered loaf pan in preheated 375°F oven for 25 minutes.
