Rice & corn dressing

Ingredients:
2 cupBrown or white rice
-(uncooked)
1 lbsChicken or turkey
-giblets, use few or no
-livers
Broth from cooking giblets
1/2 Bunch of celery hearts
-finely sliced
1 largeBell pepper, chopped
2 medOnions, chopped
Salt & pepper to taste
Cayenne pepper to taste
Optional: Poultry
-seasoning, sage and
-garlic powder to taste
1/4 cupWorcestershire sauce (or
-to taste)
1 can(12-oz) corn (Green
-Giant Niblets preferred)
Procedures:
1Cook rice according to package directions.
2Cook giblets in salted water until tender, cool, then chop or grind.
3Ave the broth.
4Saute celery, onion and bell pepper until the celery is limp (can be easily smashed between thumb and forefinger).
5Add all seasonings except worcestershire sauce.
6Simmer for 5 minutes.
7Add the worcestershire sauce and corn.
8Simmer for 10 minutes.
9Combinerice and vegetable mixtures.
10Add the chopped giblets and mix well.
11Use the broth to moisten, if necessary.
12Put the dressing in the turkey and cook the turkey as usual.
13If stuffing wild ducks or geese, do not stuff until the last 15 to 30 minutes of cooking time.
14Enough to stuff 1 large turkey.
