Grand marnier apricot stuffing

Ingredients:
1 cupDried apricots, diced
1 1/2 cupGrand Marnier
4 cupChicken broth
2 cupCelery, coarsely chopped
1 Yellow onion, chopped
1 lbsTurkey sausage
1 lbsHerb stuffing mix
1 cupApple pieces, slivered
1/2 tspDried thyme
Fresh ground balck pepper
Procedures:
1Place apricots and 1 cup grand marnier in a small saucepan, and heat to boiling.
2Remove from the heat and set aside.
3Heat chciken broth to boiling.
4Add celery and onion.
5Simmer 20 minutes or until tender.
6Cook the sausage in the microwave oven and chop fine.
7In a large mixing bowl, combine stuffing mix, apricots with liquid, sausage, slivered apples, onion, celery and broth.
8Stir to combine.
9Add remaining grand marnier.
10Stir well to moisten stuffing.
11Season with thyme and pepper to taste.
12Makes enough for 21-24 pound turkey
