Ingredients:

| | Lemons | | 3
| lbs | Sugar | | 2
| oz | Tartaric acid | | 1
| tsp | Lemon Essence | | 1
| pint | Water |

Procedures:
| 1 | Peel the lemons and place the rind into a saucepan with the sugar and 1 pint of water, let them boil until clear, stirring now and then removing any scum. | | 2 | Strain into a jug and cover with a cloth till cold. | | 3 | Squeeze the juice of the three lemons over teh tartaric acid and add a little cold water to dissolve it. | | 4 | Mix this with the syrup and the essence of lemon. | | 5 | Stir well and bottle. | | 6 | One tablespoon in a glass of water or soda water make a delicious summer drink |
