Ingredients:

| quart | Hot water | | 1 1/2
| lbs | Smoked ham hocks | | 2
| lbs | Small navy pea beans | | 1
| | Onion, chopped |

Procedures:
| 1 | Butter salt and pepper | | 2 | wash beans and run through hot water until beans are white again. | | 3 | Put on the stove with four quarts of water. | | 4 | Add the smoked ham hocks and boil slowly in a covered pot, approximately three hours. | | 5 | braise chopped onion in a little butter, and when light brown, put in bean soup. | | 6 | season with salt and pepper, then serve. | | 7 | Do not add salt until ready to serve. | | 8 | serves 8 |
