Vegetable soup with tortellini

Ingredients:
8 cupChicken broth
1 largeOnion, diced
2 largeCarrots, peeled and diced
2 Celery stalks, diced
2 Leeks, white only, diced
2 Zucchini, diced
1/2 tspOregano
1/2 tspDried basil
1 packFrozen tortellini(12oz)
3 Roma tomatoes, chopped
Salt and pepper
1/4 cupGrated Parmesan cheese
Procedures:
1Heat the broth in a large saucepan and add the onion, carrots, celery, leeks, zucchini, oregano, and basil.
2Simmer gently covered for 10 minutes.
3Add the tortellini and cook until al dente.
4The last 5 minutes of cooking, add the chopped tomatoes.
5Season to taste with salt and peppers.
6Allow to cool before refrigerating.
7Supply parmesan cheese to sprinkle over soup when served.
