Watercress & leek soup

Ingredients:
1 lbsLeeks, trimmed, washed &
-- sliced
2 packWatercress, washed
1/2 ozMargarine
3 1/2 cupStock
1 tspCornstarch
Salt & pepper
Procedures:
1Fry leeks & watercress in margarine in a large pot over a low heat for 15 minutes.
2Keep a lid on the pot, but stir occasionally, don"t let it brown.
3Add stock, bring to a boil & simmer for 10 minutes.
4Dissolve cornstarch in a little cold water & add to the soup.
5Blend till smooth, reheat & serve.
