Ingredients:

| cup | Mixed dried beans* | | 2
| quart | Water | | 1
| large | Onion chopped | | 1
| tbsp | Chili powder | | 1
| | 2 T Lemon juice | | 2
| tbsp | Salt | | 2
| cup | Diced ham or sliced smoked | | | -sausage | | 1
| | Clove Garlic, minced | | 1
| can | Tomatoes (28 oz.), chopped |

Procedures:
| 1 | (*use at least 7 varieties of beans - great northern, navy, black, garbanzo, green split peas, pinto, and red beans). | | 2 | Rinse beans, place in large kettle, cover with water add salt and soak overnight. | | 3 | Drain add 2 quarts water and ham/sausage. | | 4 | Simmer for 2-?to 3 hours. | | 5 | Add onion, garlic, chili powder, tomatoes, and lemon juice. | | 6 | Simmer 45 minutes. | | 7 | Add salt and pepper if desired. |
