| cup | Dried yellow split peas | | 8
| cup | Vegetable stock | | 2
| med | Potatoes | | 2
| large | Carrots | | 3
| | Celery stalks | | 1
| large | Onion | | 1
| | Turnip, peeled | | 2
| | Parsnips, peeled | | 3
| tsp | Mustard powder | | 1
| dash | Allspice | | 1
| tsp | Cumin | | 1
| tsp | Marjoram | | 1
| tsp | Thyme | | 2
| tsp | Salt | | | Freshly ground pepper | | | Croutons |

Procedures:
| 1 | Rinse split peas, bring to a boil in the stock. | | 2 | Coarsely chop the vegetables & add to the water as it comes to a boil. | | 3 | Lower heat & simmer for about 1 ?hours. | | 4 | Puree soup in batches until it is quite smooth. | | 5 | Add spices & herbs & season with salt & pepper. | | 6 | Reheat gently. | | 7 | "sundays at moosewood restaurant" |
