Zucchini bisque

Ingredients:
2 tspOil
1 medOnion, chopped
1 1/2 lbsZucchini, sliced
2 tspSalt
1 1/4 cupVegetable stock or water
1/2 tspNutmeg
1/8 tspFreshly ground black pepper
1/2 lbsTofu
1 tbspOil
1/4 cupVegetable broth or water
Procedures:
1Saute the first four ingredients.
2Add the stock or water, nutmeg and pepper to the sauteed vegetables.
3Cover and simmer 20 minutes.
4remove from heat and let cool 5 minutes.
5blend the tofu, 1 t oil and ?cup vegetable broth in blender or food processor until smooth and creamy.
6Stir blended tofu mixture into sauteed vegetables.
7Heat, but do not boil.
8makes 6 cups.
