Watermelon ice

Ingredients:
6 cupWatermelon, peeled, seeded
-and cut into 1-inch chunks
3 tbspConfectioners' sugar
1 tbspLemon juice
1/4 tspSalt
Procedures:
1In covered blender container at low speed, blend 1 cup watermelon chunks with confectioners" sugar, lemon juice and salt until mixture is smooth; add remaining watermelon chunks and blend a few seconds longer until smooth.
2Pour into 9" by 9" baking pan; cover with foil or plastic wrap and freeze until partially frozen, about 2 hours.into chilled large bowl, spoon watermelon mixture.
3With mixer at high speed, beat until fluffy.
4Return mixture to baking pan and freeze until firm, about 1 ?hours.
5To serve: remove watermelon ice from freezer and let it stand at room temperature 10 minutes for easier scooping.
