| 1 | *see recipe for mock pistachios grease 13x9x2" baking pan; set aside. |
| 2 | In 3-quart saucepan melt butter. |
| 3 | Add sugars and water and mix well. |
| 4 | Bring to boil, stirring constantly. |
| 5 | Place cany thermometer insyrup and when it reaches 260°F, stir in almonds. |
| 6 | Boil to 300f (hard-crack stage), stirring occasionally. |
| 7 | Remove from heat; stir in soda. |
| 8 | Working rapidly, pour candy into greased pan, top with chocolate pieces and let stand a few minutes until melted. |
| 9 | Spread chocolate evenly, then sprinkle with mock pistachios. |
| 10 | Cool in pan on rack. |
| 11 | To serve, break in pieces. |
| 12 | Store airtight with waxed paper between layers in cool, dry place 4 weeks. |
| 13 | Makes about 1-?pounds. |
