Ingredients:
1 1/4 lbsBoneless pork, cut in ?
- strips
2 tbspSoy sauce
1/4 cupDorothy Lynch Home Style or
- Reduced Calorie dressing
4 tspCornstarch, divided
5 tbspSalad oil, divided
1 packFrozen pea pods, slightly
- thawed (6 oz)
2 tbspWater
16 ozApricot halves, drained and
- Sliced, reserving syrup
Hot cooked rice
Procedures:
1Place pork in a bowl.
2Combine soy sauce, dressing and 3 cornstarch and pour over meat.
3Allow to marinate 15 minutes.
4Heat 4 tablespoons oil in wok or large skillet.
5Drain pork, reserving marinade.
6Add pork to wok and cook over high heat, stirring about 4-5 minutes or until meat is done.
7Remove meat and set aside.
8Drain wok.
9Add remaining 1 tablespoon oil to wok.
10Add snow peas and stir-fry about 30 seconds.
11Add water, cover and steam about 30 seconds.
12Stir in pork and apricots.
13Dissolve cornstarch in reserved apricot syrup.
14Blend in remaining marinade.
15Add to wok and heat, stirring until sauce thickens.
16Serve each portion with ?cup hot cooked rice.
